Green hummus with moringa
Light, pale-green hummus with tahini and lemon, for bread or with fresh vegetable strips.

Ingredients · 4 servings
- 8 gOrganic Moringa Vita Verde
- 400 gcooked chickpeas
- 3 tbsptahini (sesame paste)
- 1 pclemon (juice)
- 1 clovegarlic
- ½ tspground caraway
- 3–4 tbspice water
- 2 tbspolive oil
- pinchsalt
- To serve
- 1 tspsesame
- 1 pccarrot
- ½ pccucumber
- ½ pcpaprika
Check the ingredient labels of what you buy (e.g. stock can contain celery).
Method
- In a food processor, blend tahini, lemon juice and garlic for 1 minute.
- Add the chickpeas, moringa, cumin and salt and blend for 2–3 minutes. While blending, drizzle in ice water so the hummus is fluffy and smooth.
- Finally stir in the olive oil, taste and season with salt.
- Serve drizzled with oil and sprinkled with sesame seeds, with carrot, cucumber and pepper cut into strips on the side.
Tip: Moringa gives the hummus a nice green colour and a slight grassy note.
Keeps in the fridge for 3 days – one quarter per day.
