Cocoa chia pudding with reishi and raspberries
Thick, chocolate pudding that makes itself in the fridge. Raspberries add freshness and color.

Ingredients · 1 serving
- 1 gOrganic Reishi Inner Sanctum
- 3 tbspchia seeds
- 180 mlalmond drink
- 1 tbspcocoa powder
- 2 tspmaple syrup
- 3 dropsvanilla extract
- pinchsalt
- To serve
- 60 graspberries
Check the ingredient labels of what you buy (e.g. stock can contain celery).
Method
- In a jar, mix the cocoa, reishi and salt, then pour in a little of the drink and stir into a smooth paste.
- Pour in the remaining drink, add the syrup, vanilla and chia seeds, and mix well.
- After 10 minutes, stir again so the seeds don't clump, then cover and place in the fridge for at least 4 hours.
- Before serving, top with raspberries.
Tip: For a creamier texture, briefly blend the pudding with an immersion blender before serving.
